The winery is located in the municipality of Requena (Valencia province) in the Spanish region of Valenciana, in the DO area of Utiel-Requena. Its origins lie in a winery founded in 1808 with a wine cellar dug into the limestone rock. It was reactivated in 1991 by the couple Ana Suria and Vicente García. They learned the craft of making sparkling wine in Champagne. A hotel is attached. According to the house's website, the philosophy or ethics are based on the three pillars of ecology, sustainability and innovation in deep connection with the region and its history.

The vineyards cover 12 hectares of vines at 650 metres above sea level on calcareous and sandy soils with little organic matter, so that the vines can take deep root. They are surrounded by temperature-moderating forests. The red wine varieties Tempranillo, Merlot, Cabernet Franc, Garnacha Tinta, Macabeo and Bobal are cultivated, as well as the white wine varieties Albariño, Godello, Chardonnay, Parellada, Merseguera and Bronx. The "Pago de Tharsys" sub-area was classified as the highest Spanish wine quality level Vino de Pago in 2019. The vineyards are cultivated in accordance with certified organic viticulture.

The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
