Zillinger Herbert

The winery is located in the municipality of Ebenthal in the south of the Lower Austrian wine growing region Weinviertel. Since 2003, the estate has been managed in the third family generation by Herbert Zillinger, who is supported by his wife Carmen. The vineyards cover 15 hectares of vines on loess soils in the vineyards In Haiden, Steinberg, Vogelsang and Weintal. They are 85% planted with the white wine varieties Grüner Veltliner (with 70% of the total area), Sauvignon Blanc, Traminer and Welschriesling, and 15% with the red wine variety Zweigelt. Certified Biodynamic viticulture is practised according to the rules of the association respect-BIODYN. This includes fertilization with composted horse manure and pomace to build up humus and revitalize the soil. We deliberately avoid artificial irrigation in order to force the vines to take deep roots and thus clearly express the terroir in the wines.

The vinification follows the company's motto: Wines with USP (unique selling proposition) - puristic, uncompromising, conscious of origin and modern in the sense of "back to the roots". The fermentation is carried out entirely spontaneously with the vineyard's own yeasts. As a matter of principle, no additives are used. Depending on the type of wine, ageing takes place in stainless steel tanks or in large wooden barrels. The flagship of the house is the Grüner Veltliner Radikal, which is matured in large wooden barrels. Other premium wines are the vineyard-Veltliner Ried Vogelsang and Ried Weintal. All bottles are filled with screw cap with as little sulphurization as possible.
