The winery is located in the municipality of Flörsheim-Dalsheim (Wonnegau area) in the German wine-growing region of Rheinhessen. It was founded in 1990 by the couple Volker and Heide-Rose Raumland through the purchase of Villa Merkel. After studying viticulture in Geisenheim, Volker Raumland worked as operations manager at a Palatinate winery and gained his first experience in sparkling wine production with a mobile sparkling wine bottling plant. A vinotheque was opened in 2015.
The vineyards cover 14 hectares of vines in the Rheinhessen wine-growing region in the single vineyard sites Bürgel (Dalsheim), Kirchenstück (Hohen-Sülzen) and Silberberg (Mölsheim), as well as in the Palatinate wine-growing region in the single vineyard Schlossberg (Bockenheim). They are planted with the varieties Pinot Noir, Chardonnay, Riesling, Pinot Blanc and Pinot Meunier. The vineyards are cultivated according to certified organic viticulture guidelines. Through selective hand-picking, only physiologically ripe and healthy grapes are gently processed. Only the must from the first pressing(tête de cuvée) is used for the sparkling wines.
