The winery is located in the municipality of Querfurt-Vitzenburg (Neuenburg Castle area) in the German wine-growing region of Saale-Unstrut. It was founded in 2008 by Klaus Lüttmer as a career changer and "built up from nothing". The vineyards had to be planted for the first time on the Vitzenburger Schloßberg. After several moves with the cellar, the company headquarters have now been in Vitzenburg since 2012. The vineyards cover almost two hectares of vineyards in the single vineyards Nüssenberg (Weischütz) and Schloßberg (Vitzenburg). They are planted with the white wine variety Riesling and the red wine varieties Frühburgunder, Spätburgunder (Pinot Noir) and Cabernet Franc. The first trials with biodynamic viticulture are taking place on the Vitzenburger Schloßberg. One of the quality criteria is greatly reduced yields. In the cellar, a non-invasive principle with as little intervention as possible (controlled inactivity) is practised. After spontaneous fermentation, the wines are first aged in stainless steel tanks and then for six to eight months in used barriques. The wines are vinified as gently as possible and bottled without filtration with little use of sulphur. The premium wine of the house is Frühburgunder S Herr Lüttmer (Fasselektion). The winery is a member of the Saale-Unstrut winegrowers' cooperative.
