The appellation is located in the north-east of the French wine-growing region Languedoc. It was classified as AOC in 1985 and belongs to the highest quality category "Crus du Languedoc". The vineyards cover 1,000 hectares of vines on diverse soils of limestone, conglomerates, dolomite, boulders and marl on the Pic Saint Loup (658 m), which gives the appellation its name. They cover 12 communes in the département of Hérault and one commune in the département of Gard. Red wine and rosé are blended from at least 2 of the 3 main grape varieties Grenache Noir (Garnacha Tinta), Mourvèdre (Monastrell) and Syrah, as well as Carignan Noir (Mazuelo), Cinsaut, Counoise and Morrastel (Graciano). Well-known producers are Château de Cazeneuve, Château du Lancyre, Château de Lascaux, Domaine Ermitage du Pic Saint-Loup, Domaine Haut-Lirou, Domaine de l'Hortus, Domaine de Mirabel, Domaine de Mortiès, Domaine de la Salade Saint-Henri, Domaine de Villeneuve and Mas Bruguère.
