Term for a wine that is often still cloudy and has only recently completed its alcoholic fermentation. It may therefore still need to be clarified. The two preliminary stages are 1. Federweißer (Germany) or Sturm (Austria) and 2. Staubiger (Austria) - see also under Most. The definition according to the EU regulation: young wine is the "designation for a wine whose alcoholic fermentation has not yet ended and which has not yet been separated from the yeasts ".

The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
