Term (also Dockenpresse) for a historical wine press. The term "Docken" refers to the pressed material (grapes), which is wrapped in cloths (Docken). These docks are stacked and pressurised using a pressing plate to extract the grape must and collect it in a container. The pressing plate is pressed down by means of a mechanical or manual pressing system (screw or a long lever = beam) as in a tree press. Such pressing systems are rarely used today.
The picture shows some dock presses in the Eberbach monastery in Eltville(Rheingau). These were still in use until 1953.
See also other pressing systems under Presses. For information on the production of alcoholic beverages, see the keywords Champagne (sparkling wine, sparkling wine), distillation (spirits production), speciality wines, spirits (types), winemaking (wines and wine types) and wine law (wine law issues).
For me, Lexicon from wein.plus is the most comprehensive and best source of information about wine currently available.
