Dockenkelter

Term (also Dockenpresse) for a historical wine press. The term "Docken" refers to the pressed material (grapes), which is wrapped in cloths (Docken). These docks are stacked and pressurised using a pressing plate to extract the grape must and collect it in a container. The pressing plate is pressed down by means of a mechanical or manual pressing system (screw or a long lever = beam) as in a tree press. Such pressing systems are rarely used today.

Eberbach - Pressen

The picture shows some dock presses in the Eberbach monastery in Eltville(Rheingau). These were still in use until 1953.
