The process, also known as vinification, involves all procedures and measures in the vineyard and cellar to produce wine from grape. Grape variety have been cultivated for at least 6,000 to 8,000 years, as evidenced by plant remains found in Asia Minor and numerous ancient wine vessels and artifacts from many regions. The cradle of wine culture is considered to be Transcaucasia and the high cultures of Mesopotamia. Recent research suggests that one of the likely multiple origins may also lie in adjacent Turkey Southeast Anatolia near the biblical Mount Ararat.
