Rice liquor

A popular spirit, especially in Asia, made from fermented rice. In China, it is called Choum, Chao Xing or Ruou and is often flavoured with flowers or fruit extracts. In Indonesia and Vietnam it is called Choum-Choum and in Malaysia Samau. The alcohol content can be between 20 and 50% by volume, depending on the distillation process. Rice wine or Japanese sake (with about 20% vol.) is often called rice liquor, although strictly speaking it is not a liquor. A arrack is also made from rice, among other things.
