Emergency ripening

Term used to describe an absolute state of emergency in the growth of the vine in the annual vegetative cycle during the maturation phase. If a vine is endangered by external circumstances such as extreme climate (especially extreme dryness, heat or drought), it mobilises its last reserves to bring the grapes to a kind of ripeness. This is to ensure the continued existence of the vines. Such "emergency-ripened" grapes usually have extremely low acidity and sugar levels(must weight). One cause may be water stress.
