The winery is located in the municipality of Sancerre in the French Département of Cher on the upper Loire. It was founded by Jean Vacheron and expanded by his sons Jean-Louis and Denis Vacheron. Today, the company is run by the third generation of their sons (cousins) Jean-Laurent and Jean-Dominique Vacheron. The vineyards cover 45 hectares at an altitude of 300 to 350 metres above sea level, including the two top sites of Les Romains and Belle Dame, with the stony flint soils typical of this appellation, with exposed scree. They are planted with the two varieties Sauvignon Blanc and Pinot Noir, which are very old vines between 30 and 60 years. Biodynamic viticulture is practised according to the certified rules of the organic association DEMETER. One quality criterion is extremely low yields. A spontaneous fermentation with the vineyard's own yeasts takes place in steel tanks or oak barrels. Then the wines mature in French barriques. The product range includes various red wines, rosé wines and white wines AOC Sancerre. The premium wines of the house are Sancerre Blanc "Les Romains" (12 months in neutral oak barrels) and Sancerre Rouge "Belle Dame" (12 months in barriques, 12 months in 25 hl oak barrels).
