A protected designation in the Italian region of Lombardy in the Oltrepò Pavese area for a sparkling wine made from Pinot Nero (Pinot Noir) by means of bottle fermentation according to the metodo classico, with a former DOC classification. It is composed of Classico and Pavese. Since the elevation of sparkling wines produced by means of bottle fermentation to the DOCG quality level in 2007, however, this term is only rarely used. However, it can still be found on the labels as a concise wine name (as opposed to the rather long DOCG designation).
Serious sources on the internet are rare - and Wine lexicon from wein.plus is one such source. When researching for my articles, I regularly consult the wein.plus encyclopaedia. There I get reliable and detailed information.
