Name for the blackcurrant (in Austria "black currant") or the essence produced from it (thick syrup). According to the taxonomic system, the plant - like the grapevine - belongs to the Rosidae subclass (rose plants). The berries contain terpenes with intensely fruity, spicy and subtly acidic flavours and a very high vitamin C content. When referring to wine (wine description), "cassis" is often used to describe the characteristic flavour of a red wine.
