Smell and flavour description for a wine in the context of a wine talk or wine evaluation. This is particularly common in red wines and is reminiscent of animals and animal products such as animal skin, fur, leather, musk, meat and blood. This can be understood in a positive way, but if it is more pronounced it can indicate the wine defect horse sweat. Similar terms are selchig and roast odour.
The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
