Description (also leathery) for the taste or smell of a wine in the context of a wine address. This tone, which occurs mainly in red wines, is caused by ethylphenols. In a small degree this causes a positive impression, which is appreciated by some connoisseurs. If it is more pronounced, it is negatively expressed by pungent, anal notes and means the wine defect horse sweat (also phenol tone). A related or almost equivalent term is animalistic.
The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
