In the New World, yield is often measured or expressed in "tons/acre" or "tons/hectare" (ton = ton). Of course, this cannot be converted exactly into the "hectolitre/hectare" that is usually used in Europe, but 0.7 litres of must per kilogramme of grapes is an approximate value. 1 ton/acre results in just under 2.5 t/ha. The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
