Tip over

Description (also kippen) for a wine in the context of a wine address that has recently passed the peak of its development and samit has, so to speak, "tilted" or "tipped over" into the negative phase. This manifests itself in a lack of fullness of flavour and too little body. The negative increase or the final stage of it is over and dead. See also ageing, bottle age ing and drinking maturity.
