Sour cream

A term formerly used in Germany for the layer of dirt between the cork and the capsule that can form during prolonged storage. This can be a cause of cork taint. For wines that have been stored for a long time, it is therefore advisable to carefully clean the neck of the bottle with a clean cloth after removing the capsule. However, sour cream (Schmant, Schmettes) is also the name given to a high-fat milk product made from cream or cream that has turned sour.
