Sifone

Italian term for a grape must made from late-harvested, overripe grapes whose fermentation has been stopped by adding alcohol. The mixture is then used to stop fermentation and sweeten a wine; for example, in certain types of Marsala. Sifone corresponds to the Spanish mistela.
