Méthode cap classique

A term commonly used in South Africa (also abbreviated to MCC) for the production process of sparkling wine according to the champagne method (bottle fermentation). Only the Chardonnay or Pinot Noir grape varieties may be used for these sparkling wines. The quality corresponds to European top sparkling wines.
