Maître de chai

French term (Engl. "master of the cellar") for the cellar master, who is responsible for the cellar-technical course of the entire process of winemaking. This extends from taking delivery of the grapes after the harvest, through the ageing of the wines, to bottling. See also under Maître and Régisseur.
