Common name in the German production areas of the Palatinate and Rhine-Hesse for a roll made from finely ground rye, sprinkled with caraway and/or salt and often prepared with onion or bacon. The name derives from its similarity to the gnarled trunk of the vine. Mundartlich designations are also "Wingertsknorze" or "Woiknorze". Wine gnorze is a component (the "Weck") of the traditional meal Weck, Worscht un Woi. See also under Wine growing customs.
