Tryptamine

Biogenic amine from the eponymous amino acid tryptophan. It is a metabolic product of numerous living organisms, especially plants. Tryptamine can also be found in wine, often together with histamine. It seems to be a special characteristic of Pinot varieties. See also under total extract.
