Separators

Mechanical device (also centrifuges) made of stainless steel for removing substances from liquids; see under centrifuging.

Physical-mechanical separation process (also known as centrifuging or separation) in which certain particles are removed from a liquid by mechanical centrifuges (separators) using centrifugal force. Depending on the design, 4,000 to over 8,000 times the force of gravity is generated. In the case of natural sedimentation in the must, only the normal force of gravity acts. The particles in a centrifuge are accelerated to such an extent that they sink more than 100 times faster, which enables particularly effective separation of even the finest lees.
