The appellation is located in the centre of the French wine region Languedoc. The vineyards cover around 110 hectares of vines on soils of quartz pebbles, flint and limestone. They extend over eight communes in the Département of Hérault. The white wine is 100% varietal, made from Clairette. There are also Rancio (aged for three years) and Vin de liqueur (addition of alcohol) versions. Well-known producers are La Clairette d'Adissan, Domaine d'Aubepierre, CV de Cabrières and Château de la Condamine-Bertrand.
