A beer made from maize from the Andes region in South America that was already drunk by the Incas. The name is derived from "chichab" (corn), in the Quechua language it is called Aqha. It is also obtained by fermenting other plants by adding saliva. Amylases (enzymes) in the saliva break down the maize starch into sugar, the solution then easily goes into fermentation. This is why it is also called "spit beer". The alcohol content is between 1 and 6% vol.
