Non-precise designation (also secondary fermentation) for a second process carried out after the alcoholic fermentation. In most cases, this refers to bottle fermentation or to the possible fermentation of a sparkling wine in a tank. It can also refer to malolactic fermentation, subsequent fermentation after maceration or other fermentation processes such as Governo.

The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
