Repair wine

Term for a wine that is drunk between individual flights (rounds) of an intensive tasting. The repair wine serves to calm and neutralise the taste and olfactory nerves that have been stressed by previous wines and to make them receptive to new sensory impressions. It is mainly used for extensive wine tastings with very different wine styles.

Use at tastings

A repair wine is particularly recommended after heavy, sweet and/or high-alcohol wines, as these can influence sensory perception for longer. After sweet wines, an acidic wine is often preferred to balance the flavour and refresh the mouth.
