Name for the undesirable yeast deposits on the inner belly wall of sparkling wine bottles. These may be formed during bottle fermentation by unsuitable yeasts, for example, and are not dissolved by remuage (shaking). The yeast deposits on the bottom of the bottle, on the other hand, are called yeast sediments. A detailed description of sparkling wine production with all processing steps can be found under Champagne.
