Leaves are the energy power stations of green plants and, alongside the roots, the most important nutritional organs. In grapevines, they form like the eyes (buds), tendrils and inflorescences (shoots) as lateral growth on the nodes of young growing shoots, which sprout in spring from winter buds on one-year-old wood. As the shoot tip grows in length, new leaves branch off continuously.

With the help of leaf pigments such as chlorophyll, carotenoids and flavonoids, solar energy is absorbed by the leaves and converted into energy-rich glucose (grape sugar) and oxygen during photosynthesis using carbon dioxide and water. The carbon dioxide is absorbed from the air through the stomata, usually on the undersides of the leaves. The oxygen produced during the day escapes to the outside through these small stomata.

Due to the usually drier air, water constantly evaporates from the plant cells, which evaporates outwards into the air (transpiration).
