The "Bio-Weingut Willi Weber" is located in the municipality of Roseldorf (Sitzendorf an der Schmida) in the Lower Austrian wine-growing region of Weinviertel. It is managed by Willi Weber, son Andreas is responsible for the cellar. The vineyards are located in the Hiesbeet, Mitterberg and Schlossberg vineyards on the southern slopes of the Schmida valley. They are planted with the white wine varieties Grüner Veltliner and Welschriesling, as well as with the red wine varieties Zweigelt and Blauer Portugieser. Since 2000, the vineyards have been cultivated according to strict organic guidelines without the use of chemicals in the vineyards and cellar. The farm's philosophy is to produce quality wine in harmony with nature without exposing the wine to unnecessary chemical and mechanical stress. Important quality criteria are the physiological ripeness of the grapes and the right time of harvest. At all stages of the process, care is taken to protect the grapes, must and wine as much as possible. Premium wines include, for example, various Weinviertel DAC (Grüner Veltliner) and Welschriesling Selection.
