A siphon is an S-shaped pipe whose lower bend is constantly filled with liquid. The most common application is the odour trap of household sewage pipes. Such a device is sometimes used for tapping (decanting) wine into another container, which is also called siphoning. This is much gentler than pumping over. See also under winemaking.

The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
