Commercial term for a sparkling wine after bottle fermentation (second fermentation), which is stored for some time until disgorgement (removal of the yeast sediment). However, the term has no legal meaning in wine law. In contrast, sparkling wine that is ready for delivery but not yet finished (i.e. before any dosage has been carried out) is called "finished sparkling wine". Raw wine has a similar meaning. A detailed description of sparkling wine production with all processing steps can be found under the heading Champagne.
For my many years of work as an editor with a wine and culinary focus, I always like to inform myself about special questions at Wine lexicon. Spontaneous reading and following links often leads to exciting discoveries in the wide world of wine.
