The significant influence on the quality of wine is determined by the grape variety, the climate, the vintage, the soil type, the physiological ripeness of the grape at the harvest, and the art of the winemaker, as well as the metabolic processes that often take place over many years during the bottle aging or aging of the wine. In high-quality top wines, the quantities of the ingredients create an optimal, balanced ratio, particularly the proportion of acids, tannins, sugar, alcohol, and aromas play a significant role (see total extract).
