Nu'er-Hong

Rice wine brand (chin. Mijiu) from China, the name means "red girl". It is also known as Huadiao Jiu. The basic ingredients are rice and wheat, the alcohol content is 16% vol. The red colour comes from the mould Monascus purpureus, with which the fermentation (conversion of starch into sugar) of the basic materials is initiated. In Eastern China, it is a tradition to bury a rice wine in the earth when a girl is born. At the girl's wedding the rice wine is then dug up and drunk. But if the girl dies before the wedding, the wine is called "faded flowers". See also under Sake.
