The winery is located in the municipality of Barsac in the Sauternes region (Graves, Bordeaux). The name is derived from "Couteau" (knife). Gabriel Barthélémy Romain de Filhot (+1794 by guillotine), then also owner of Château Filhot, acquired the property in 1788. By marriage, it came into the possession of the famous Lur-Saluces family (owners of Château d'Yquem) in 1810 and remained in their ownership until 1922. After several changes of ownership, the estate was bought by Marcel Baly in 1977. It was classified as a Premier Grand Cru Classé in the 1855 Bordeaux Classification.
