The winery "Johannes Zillinger's Demeterhof" is located in the municipality of Velm-Götzendorf in the south-east of the Lower Austrian wine-growing region of Weinviertel. The traditional winery was founded in 1673 by David Zillinger and is still family-owned today. After many experiments in the vineyards and years of research, Hans Zillinger restructured the winery in 1985 and switched to an environmentally friendly, organic-biological farming method. For this pioneering achievement, he was honoured with an environmental award from the state of Lower Austria. A butterfly is emblazoned on the bottle labels.
The vineyards cover 20 hectares of vines on the limestone hills around the village. They are 70% planted with the white wine varieties Grüner Veltliner,Pinot Blanc, Riesling, Welschriesling, Chardonnay, Sauvignon Blanc, Scheurebe and Muskateller, and 30% with the red wine varieties Zweigelt, St. Laurent, Cabernet Sauvignon and the PIWI varieties Roesler and Regent. Biodynamic cultivation is carried out according to the rules of DEMETER using a circular economy. This includes the use of home-made compost as a fertiliser and soil conditioner as well as herbs in the vineyard as a habitat for various beneficial insects and as a basis for extracts and teas.
