Austrian (Viennese) term for a passionate wine connoisseur and wine connoisseur; who explores the full flavour of a wine by "biting", i.e. professionally tasting it. This is understood to mean the "rolling" of the wine in the mouth so that all the different taste buds are reached as far as possible. Weinbeißer is also the name for a wine pastry that is offered at the Heurigen (Buschenschank). There are many different recipes and ways of preparing it; it is often gingerbread.
