wine for distilling

Designation (also base wine) for a processing wine that is not suitable for consumption for the production of wine spirit or brandy. Acidic grape varieties such as Airén, Baco Blanc, Colombard, Folignan, Folle Blanche, Graisse, Jurançon Blanc, Mauzac Blanc, Mauzac Rose, Meslier Saint-François, Montils, Select and Ugni Blanc (Trebbiano Toscano) are suitable for this purpose. A wine distillate of up to 86% vol. is added to a fully fermented wine with minimal residual sugar, resulting in an alcohol content of 18 to a maximum permitted 22% vol. This is then used for further distillation.
