Vitkin

The boutique winery (see garage wine) is located in the community of Vitkin north of Tel Aviv in Israel. It was founded in 2001 by Doron and Sharona Paz-Belegolovsky together with the oenologist Asaf Paz. It uses grapes from selected vineyard sites all over the country. The white wine varieties Viognier, French Colombard (Colombard), Gewürztraminer and Johannesberg Riesling (Riesling) are processed, as well as the red wine varieties Cabernet Franc, Carignan, Petite Sirah, Pinot Noir, Sangiovese and Tempranillo. The white wines are aged in steel tanks, the red wines and the Viognier white wine are aged in American, Spanish and French barriques (in volumes of 225, 300 and 350 litres) as cuvées or as single-variety wines. Around 50,000 bottles of wine are produced annually and the trend is rising.
