Vinification intégrale

The system developed under the protected brand name "Vinification Intégrale®" by the French cooperage company "Tonnellerie Baron" is used for the preparation of red wines. Special barrique barrels with a volume of 225, 228, 265, 300, 350, 400 and 500 litres are used for this purpose. In these barrels the mash fermentation, the malolactic fermentation and the barrique maturation can take place. The barrels are continuously rotated on rollers by a special mechanical device, so that there is an intensive contact with the oak wood. The extraction of the tannins and colourings is carried out in a relatively gentle manner. The wines gain in colour, structure and fullness through this process.
