The estate is located in the municipality of Grotte di Castro (province of Viterbo) in the Italian region of Lazio. It was founded in 1999 by Mocca and Fritz Metzeler with the construction of the buildings. Five years later the wine-growing was started. Since 2011, the entire farm has been managed by the agronomist Tobias Frommann. In addition to viticulture, the company specializes in the production of strictly controlled organic products. This is olive oil from groves with 11,000 trees; produced with our own press, bacon, ham and salami from our own animal husbandry, as well as organic honey of various kinds. The Mangaliza pigs and Zackel sheep live in enclosures in oak woods and are fed with high quality organic feed. The production of all products is carried out according to strict, ecological guidelines based on the principle of sustainability. The new buildings are also constructed in an environmentally conscious manner, as only traditional building materials such as tuff stone have been used. In the vinotheque all wines of the Villa Caviciana can be tasted with a view of the Bolsena Lake.
