vegetable

Designation (also vegetal) for a "vegetable" smell and taste of a wine in the context of a wine appeal. Such a wine has tones of vegetable green, fresh grass, vegetables, eucalyptus, asparagus, hay, olives, straw or tea. In contrast to this are fruity aromas. When pronounced, this indicates unripe grapes and thus a wine defect. See also under aroma wheel.
