DOC area for bottle-fermented spumante(sparkling wine) in the Italian region of Trentino. The zone comprises selected sites in 60 municipalities in the province of Trento. The mostly terraced slopes and steep slopes from Vallagarina (Lagertal) to Valle di Cembra (Zimmerstal) with calcareous soils are optimally south-facing and exposed to strong fluctuations between day and night temperatures. This has a very positive effect on the formation of acidity in the grapes, which is important for sparkling wines, and the base wines made from them.
The Bianco and Rosato types of wine are made using any of the Chardonnay and/or Pinot Blanc and/or Pinot Noir and/or Pinot Meunier varieties. The Metodo classico (bottle fermentation) is one of the few Italian sparkling wine areas where it is mandatory. The sparkling wines must be aged on the lees for at least 15 months (su lieviti), the vintage sparkling wines (Annata or Millesimato) must mature for 24 months.
