Todi

DOC area for white wines and red wines in the Italian region of Umbria. The zone includes the municipalities of Collazzone, Massa Martana, Monte Castello di Vibio and Todi in the province of Perugia. The Bianco must consist of at least 50% Grechetto (Grechetto di Todi) = Pignoletto, the Rosso (also as Superiore) of at least 50% Sangiovese, as well as a maximum of 50% of other permitted varieties. The single-varietal wines Grechetto, Merlot and Sangiovese (red wines also as Superiore) must be made from at least 85% of the respective variety and a maximum of 15% of other authorised varieties. For these, the name of the grape variety may be prefixed on the bottle label, i.e. Grechetto di Todi, Merlot di Todi and Sangiovese di Todi. If the grapes come from classified vineyards, Vigna may be indicated followed by the vineyard name.

The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
