sur pointes

French term (also mise sur pointes, Engl. "on the points") for the final position of the sparkling wine bottles (champagne, sparkling wine) in the riddling desk after remuage, where they are positioned almost vertically with the neck down and ready for the disgorgement (i.e. the removal of the lees). See the entire production process under Champagne.
