Shoe Walter

The winery is located in the community of Sörnewitz near Meißen in the German growing region of Saxony. The former farmhouse from 1874 was acquired and restored by the Schuh family in 1990. The winery building dates back to 1874 and a second three-sided farm was added in 2008. A wine restaurant as well as holiday apartments and guest rooms are connected. The farm is managed by Walter and Martina Schuh. The vineyards comprise five hectares of vineyards in the two individual sites Kapitelberg and the Klausenberg, which is in sole ownership. In 1993 the vineyards were completely cleared and replanted. These are the white wine varieties Goldriesling, Pinot Gris, Kerner, Pinot Blanc, Traminer, Riesling and Elbling, as well as the red wine varieties Regent, Dunkelfelder and Pinot Noir.

In 2008, the conversion to a certified organic farm according to the EC regulation on organic farming was started. The grapes are partially destemmed and processed without stems. All cellar technical measures are carried out under ecological aspects. The wines are fermented in a controlled cool fermentation and almost without exception dry vinified with typical varietal characteristics. The fermentation of the red wines takes place in so-called reassembly tanks(overpumping procedure). The white wines are aged in stainless steel tanks and partly also in 500-litre wooden barrels. The red wines are mostly aged in barriques.
