Sedimentation

Term (also sedimentation, settling, degumming) for the independent settling of particles from liquids or gases under the influence of gravity or centrifugal force. In viticulture, this is understood to mean the settling of the lees of the grape must without any mechanical influence - see also degumming. Sediment is also sometimes used to describe the sediment in a wine bottle.
