The winery is located in the municipality of Birkweiler (Südliche Weinstraße area) in the German wine-growing region of
Pfalz. It has been in the family for centuries, and since 1889 it has borne the name Scholler through marriage. Since 1991 it has been run by Helmut and Bettina Scholler. The vineyards cover 15 hectares of vineyards with around 40 plots in the
Kastanienbusch (Rotliegendes),
Mandelberg (Muschelkalk) and
Rosenberg (loess and loam) sites in the municipality of Birkweiler, as well as
Herrenberg in the municipality of Nussdorf. They are 70% planted with the white wine varieties Riesling, Chardonnay, Pinot Blanc, Silvaner, Sauvignon Blanc and Gewürztraminer, and 30% with the red wine varieties Pinot Noir, St. Lauren and Cabernet Sauvignon. The wines are fermented under temperature control and, depending on the destination or wine type, aged in stainless steel tanks, large wooden barrels or in barriques. Fine brandies (pomace, yeast, fruit) and bottle-fermented sparkling wines are also produced. The winery is a member of the
Vinissima winegrowers' association.
