The "Salvioni - La Cerbaiola" winery is located in the municipality of Montalcino (province of Siena) in the Italian region of Tuscany. It was founded in 1985 by Giulio Salvioni and is now managed by David Salvioni. Attilio Paglia is the cellar master. There are two wine cellars, located in a building next to the vineyards and in the historic centre of Montalcino.

The estate covers 20 hectares, of which the vineyards cover four hectares at 420 metres above sea level. Only the Sangiovese variety is cultivated in the Cordone Speronato and Guyot varieties. All work in the vineyard is carried out in the traditional way. The yield is reduced to 25 to 35 quintals per hectare with short pruning. Only ripe, healthy grapes are processed through selective hand-picking.
